If you’re anything like me, you love including rice in your meals. However, you may not know that just one cup of cooked white rice contains an average of 200 calories.
Now, however, scientists from the College of Chemical Sciences in Sri Lanka have revealed a way that you can make rice in a healthier way by using one simple trick. They say that all you have to do is add in some coconut oil and allow it to cool overnight.

By doing just this, you can slash the number of calories in your rice by 60 percent. The coconut oil reduces the calories because the fat molecules find their way inside the rice during the boiling process and double as a digestive barrier. Then, allowing the rice to cool for the night makes the bonds in the rice form stronger ‘resistant starches’ and makes it difficult for digestive enzymes to break down.

Sudhair A. James, who leads this team of researchers, said “the increasing rice resistant starch (RS) concentrations was a novel way to approach the problem of obesity.”
However, the researchers made sure to warn that reheated rice has the power to cause food poisoning. They say you should not leave the rice in the fridge for longer than a day and make sure it is piping hot after microwaving. This will likely fend off the bacteria. In addition, you should never reheat rice more than once.
The researchers have now moved on to seeing if other oils can reduce the calories like coconut oil does.
