A delicious new recipe for sour cream cucumber salad is going viral this week and we think it’ll be a new favorite for those looking for a healthy and easy meal.

Cucumbers are 96% water and they are packed with tons of nutrients. Just one serving of cucumber gives you tons of vitamin K, C, magnesium and potassium.

They are also packed with antioxidants, which makes them a perfect weapon against free radicals and cancer cells.

In addition, cucumbers will help you deal with the symptoms of autoimmune disease, improve digestion, and help treat symptoms of diabetes.

Here’s what you need to make sour cream cucumber salad:

  • ½ cup sour cream
  • 3 tbsp apple cider vinegar
  • ½ tbsp honey
  • pepper to taste
  • 4 medium-sized cucumbers, peeled and sliced
  • 1 small sweet onion, sliced and separated into rings

All you have to do is put the sour cream, apple cider vinegar, honey and black pepper into a big bowl and stir it thoroughly.

Then, add in your vegetables before tossing your salad. Leave it refrigerated for four hours, and it will be ready to serve. It really is that simple!

If you’re someone who loves herbs, you can add a quarter cup of fresh dill to the dressing. There’s even a vegan version of the recipe that involves using cashews instead of sour cream. To do this, soak one cup and a half of cashews overnight and then drain and blend your cashews in the morning.

Once you have done this, add 2 tablespoons of fresh lemon juice, 2 teaspoons of apple cider vinegar and half a teaspoon of salt before you turn on your blender.
