The Florida Key Lime Pie Festival is about to take place in Florida for the eighth consecutive year, and people will be coming from all over the world to attend it. Key lime pie is one of the most famous foods to come out of Florida, much to the joy of pie lovers everywhere.

Now, a new recipe for key lime pie is going viral, and it is sure to make your mouth water. All you need to make this cake is:

  • 3 ½ cups almond flour
  • ¼ cup coconut flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup butter
  • ¾ cup sugar substitute (Stevia)
  • 4 large eggs
  • ½ cup unsweetened almond milk
  • 1/3 cup key lime juice
  • 2 tsp key lime zest

To start, place your dry ingredients in a big bowl and then whip your butter and sugar product until fluffy while beating the eggs as well. Then, mix half of the dry mixture in the wet mixture before adding in your milk, lime juice and lime zest. Once you have done this, whisk in the rest of the dry ingredients and pour the mixture into a 9×5 pan, but don’t forget to grease it first.

Leave it to sit for 45 minutes and cover the cake batter with foil before baking it at 325F for approximately an hour, or until you see golden brown edges.

For the glaze, you will need:

  • 3 tbsp all-natural confectioner’s sugar (Stevia)
  • 2-3 tsp key lime juice

All you have to do here is whisk your ingredients thoroughly until the glaze is slightly runny. Once done, you can drizzle it over the cake.

To make the key lime cream cheese icing, you will need:

  • 8 oz. room temperature cream cheese
  • 3-4 tbsp room temperature butter
  • 4 cups confectioner’s sugar
  • ¼ cup fresh key lime juice
  • 2-3 tsp key lime zest
  • 1 tsp vanilla extract

Simply mix the cream cheese and butter in a bowl before mixing in the sugar. Then, add your juice, zest and vanilla, and pour the resulting mixture over the cake. It really is that simple!
