A cooking expert has just spoken out to say that frozen steak will taste a lot worse if you thaw it before cooking.

Dan Souza, the senior editor of Cook’s Illustrated, recently decided to test out whether or not thawing out a frozen steak had a major impact on the taste.

To carry out this experiment, Dan cut some strip loin beef into eight evenly sized steaks before cutting the steaks in half crosswise and froze all of the meat.

Dan then thawed out the steaks in the fridge over the course of a night while keeping the other halves in the freezer. He then took the steak halves and seared the frozen, thawing out steaks in a hot pan for one and a half minutes per side.

Finally, Dan put the steaks into a 275 degrees Fahrenheit oven until they were cooked to medium-rare (inside, they registered at 125.5 degrees Fahrenheit). After doing all that, Dan could analyze the steaks, and he weighed them before and after cooking. He was completely stunned by the results.

He noticed that the frozen steaks took slightly longer to cook compared to the thawed steaks. However, the frozen steaks took 18 to 20 minutes compared to the thawed steaks taking 10 to 15 minutes. This three minute cooking difference made a noticeably big difference when he cut the steaks open.

He concluded that the frozen steaks had a thinner band of grey overcooked steak under the crust, meaning that there was more tasty meat. In addition, the frozen steaks lost an average of 9% less moisture throughout the cooking process. After the taste test, it was clear that the frozen steaks tasted a whole lot better!
