It’s difficult to find snacks that are both tasty and low calorie, but if you’re looking for a healthy dish to snack on, these zucchini fritters are something you need to check out! This snack is delicious while also being surprisingly easy to make, and it’s something your whole family can enjoy.

Dr. Joseph Mercola has advised people to use zucchinis to make fritters because they have a neutral taste that can be enriched with various herbs and spices. They are also healthy because they are high in fiber with no cholesterol in them at all. In addition, zucchinis are packed full of vitamins B1, B2, B3, and B6, and folate, zinc and magnesium.

Here’s what you need to make the fritters:

  • 1 large zucchini (or 2 small ones)
  • 2 organic eggs or Flax Egg
  • 1/4 cup gluten-free flour
  • 1 clove garlic peeled and minced
  • 1/4 cup fresh basil
  • 1/4 cup fresh oregano ditto
  • 1 tbsp lemon zest
  • 1/4 tsp onion powder
  • salt and pepper
  • 2 Tbsp. organic coconut oil

And here is what you need to make the tasty avocado dip that pairs perfectly with this dish:

  • 1/2 cup finely chopped fresh dill
  • Avocado Dip Base

First, grate the zucchini using the large holes of a box grater, and then put them in a colander set in the sink.  Add  half a teaspoon of salt and let the dish sit for ten minutes.

Once you have done this, use a large dish towel to wring the zucchini dry and then place them in a large bowl. Add garlic, eggs, lemon zest, basil, oregano, onion powder, salt and pepper, and mix it all together. You can slowly add in some flour to make sure that no lumps form.

Grab a larger sauté pan, heat 2 tablespoons coconut oil over medium-high heat. The next step is to drop 2 tablespoons of the zucchini mixture into the pan, repeat, and make sure you leave about 2 inches space between the fritters. Once you have done this, cook for a few minutes then lower the heat to medium, and turn them in order to cook them on the other side too.

All you have to do after this is make the avocado dip, place the fritters on a serving plate, and enjoy!
